Valentine's Day this month of February what better way
to show LOVE then to make an effort for you and your family
to have healthier hearts and bodies. Healthy recipes can
be found in many magazines and books. Walking 15 minutes
two times a day is another great way to start building
a healthy heart. By beginning a simple walking routine
you will be ready to take part in the LIVEWELL
FFERGUSON Twilight run/walk May 15.
Planning
for Ferguson Sunday Parkways is getting underway; another
fun outdoor activity for all ages, and volunteers are
needed.

Bean and Spinach Salad Recipe:
(10 servings)
1
small red onion thinly sliced
6 TBL fresh lemon juice
1/4 C extra-virgin oil
1 1/2 C (2 oz) packed baby spinach
3 garlic cloves minced
1/2 tsp salt
3 15oz cans cannellini beans, rinsed and drained
Freshly ground pepper
- Combine
first 4 ingredients in bowl and stir well

Heat oil in small skillet over medium heat until just
warm (2min)
- Slowly
pour warm oil over onion mixture

Stir well and let sit at room temp. for 20 min stirring
occasionally

Add beans and spinach to the vinaigrette, and toss to
coat well Season with pepper to taste
